Makes: 2 servings
24 oz. Miramar Seafood Siete Mares
¼ cup white onion (diced)
¼ cup bell pepper (diced)
1 cup roma tomato (diced)
8 oz. Mexican tomato sauce
4 cups fish or chicken broth
1 tbsp. butter
1 tbsp. lime juice (freshly squeezed)
½ tsp. salt
1/3 cup fresh cilantro (coarsely chopped)
1 lime (cut into wedges for serving)
Hot sauce for serving
In a large stockpot or Dutch oven, melt the butter over medium-high heat. Add onion, bell pepper, lime juice, salt, and toss. Cook, stirring occasionally, for about 5 minutes.
Add the Miramar Seafood Siete Mares package, roma tomato, tomato sauce and pour in the broth. Cover and increase the heat to high and bring to a boil. Reduce the heat to medium, keep covered, and let the soup simmer until the seafood is cooked for an additional 15 minutes. Prior to serving, add chopped cilantro into the mixture.
Ladle the soup into large bowls and serve with the lime wedges and hot sauce. Enjoy!
